Jamie's pass it on....

Hello everyone, hope you all had a lovely weekend....I've been working & I'm now enjoying the fact I can put my feet up for a whole week.....sorry to all you poor people who have to go back to work tomorrow (I won't be feeling so smug next Sunday!!!)

I had an idea about pass it on...... not sure if you've been watching Jamie's new show but I'm shocked by how little people know when it comes to cooking. I guess they've chosen the worst people otherwise it wouldn't make good TV. Anyway here's the plan... I thought we could all post 1 recipe that is quick & very easy to make. I'm a really rubbish cook but I'm trying to get better, 2 years ago I was the M&S ready meal queen but since moving to a new house with a large kitchen I'm starting to enjoy it.

Vanessa at just original has posted a recipe from Jamie's book which looks lovely....plan to treat myself to that. Take a look........

This is my recipe....not very fancy but good for when I'm working late.

Pasta, feta cheese, olives, garlic, oil, chopped tomatoes.

It's very quick, just 11 min's for the pasta then just throw everything else in, I serve it with a salad. I've had lots of friend around to eat who are really good cooks but this always goes down well. I think because it's so simple you don't think of making it. Hope you give it ago & enjoy.

Now can you all post one simple (just for me!!) recipe & who know what ideas we'll get.

It's my first home made toad-in-the hole!! I use to buy the frozen ones but with my mum's help I made this. Told you I was rubbish in the kitchen!!

    Can I cheat and direct you to some good recipes (but they're not my own)! Two good books for quick meals, Jamie's Dinners and Nigella Express. Perhaps Father xmas can bring them? In the Jamie book, we love the spanish chicken and the paprika steak wraps, in particular. In Nigella's book, we love the anglo-asian lamb salad, pork with gnocchi and cider/mustard sauce, Singapore noodles with salmon, salmon with watercress and avocado salad, gammon steaks with parsley, chocolate mousse, choccy choc-chip cookies, chocolate peanut butter fudge sundae. There are loads in there, it is a very good book and though I love cooking and rarely find it a chore, it's always good to have some quick recipes for when you're feeling knackered!

  5. Mushroom and Garlic Chicken

    4 chicken breasts, skinned
    125g butter, softened
    125g pack grey chanterelle mushrooms, brushed and sliced if large
    2 garlic cloves, finely chopped
    2 tablespoons fresh parsley, finely chopped
    freshly ground black pepper
    Take the chicken breasts & make an incision in the centre of each, cutting to a depth of 5mm. Avoid cutting right through, you want to make a cavity for stuffing.
    Melt 25g of the butter in a frying pan & over a moderate heat saute the mushrooms for 1-2 minutes until just soft. Put to one side.
    Combine the remaining butter with the finely chopped garlic & half the parsley. Place on a piece of greaseproof paper & roll up to form a cylinder shape. Place in the freezer for 5 minutes to go firm.
    Preheat the oven to 200°C, 400°F, gas mark 6.
    Take the chicken breast & stuff the cavity with some of the mushrooms & slices of butter. Sprinkle with the remaining parsley & season with black pepper.
    Wrap each chicken breast in a piece of foil to form a parcel. Place on a baking tray & cook for 25 minutes. Meanwhile preheat the grill to a moderate heat.
    Remove chicken from the oven & unwrap each parcel to expose the chicken, grill for 5 minutes. Slice the chilled butter & place on the hot chicken & serve.

  6. Easy peasy one... throw some chicken pieces into a casserole, add some bacon bits, some chopped onions and garlic, mixed herbs, throw in carrots sliced and potatoes chunked. Pour jar of tomato passata over the top , throw in oven for about 3 hours or so on a low heat and serve with chunky bread..

    One day down on my holiday, had the BT man around to sort the internet then I'm sorry to say I went to the pub all afternoon....oh dear all those plans of making Christmas gifts etc went out the window!! It rained all afternoon so it was cosy sat in the pub. Must try harder today!! :)

  12. Hi Joe,
    So nice of you to visit.
    The easiest (and probably one of the tastiest) things I make is roast veg. Although not super quick, once it's all in the oven, you can put your feet up until it's done. You can chuck in just about anything as long as everything is the same size. My favourites are onion (red or wht) butternut squash, courgettes, aubergine, tomatoes (cherry or large ones chopped) any colour of sweet pepper and I always use tofu although you can leave it out of course. You can add garlic, sweet chilli sauce, or soy but I like it unadulterated! You can also throw some passata over it about 10 mins from end of cooking. Make sure it's all coated in a little oil (not too much or it will just steam)and put in the oven 200 30-40 mins. Serve with cous-cous or pasta. Simple! I love food but I can't be doing with faffing around for hours so I love this..hope you'll try it!

  14. Thanks for stopping by my blog. I had a conversation just today about how few people actually cook properly every day, and I discovered that 2 of the people I work with don't use a cooker - only a microwave. I love fish for an easy meal - in the oven or pan fried with some sort of potatoes and salad on the side. A sauce made from creme fraiche, horseradish, lemon and walnuts with trout goes down a treat - one of my fave meals.

It was for a Level one Teachers ass....found out today from a fellow worker n friend that i was over qualified for the job....she was hopping mad about the careerbreak thing.......as she spends huge amounts of time watching me run my setting and paperwork, home and being a network childminder.....what a silly moo....still i'm good today!

    Thanks for the support, it's nice to know other peeps have similar worries. I don't like presentations but if I'm prepared (ie, I know what I'm going to say) then I usually get through them. The problem I had was that all the other trainees have naff all else to do other than these training courses so they all have polished presentations...I on the other hand had no time to prepare! That sounds awful making you watch the video in front of other peeps. Where do they get these ideas for courses, they do nothing but knock your confidence?! I think that's the thing that puts me off about office-based jobs, it's all the bullsh*t bingo, the "tell us 5 facts about yourself" cr@p!! It's not really me at all.

    Btw, I think cooking is all about instinct and not worrying too much if you make a mistake. It's defo all about trial and error.
